Hillary's Lily White Tea Cakes



If Hillary did actually bake cookies this might be a nice time for her to whip up a batch of these powerfully white morsels for her new campaign advisor, Karl Rove. He's helping her stir the fires of white racial fears these days and what better way to celebrate than a nice gift of cookies? After so many years of being smeared by the vast right wing conspiracy, it seems that Hillary has actually found someone she hates more than the Republican sleaze slingers: Obama. A fellow Democrat with whom she purportedly agrees on most issues. This isn't really about issues, though. It's about Hillary getting what is due her and kicking that uppity upstart to the curb. Now, to figure out what Hil will bake for John McCain.
Hillary's Lily White Tea Cakes
INGREDIENTS

* 1 cup butter
* 1 teaspoon vanilla extract
* 6 tablespoons confectioners' sugar
* 2 cups all-purpose flour
* 1 cup chopped walnuts
* 1/3 cup confectioners' sugar for decoration

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl, cream butter and vanilla until smooth. Combine the 6 tablespoons confectioners' sugar and flour; stir into the butter mixture until just blended. Mix in the chopped walnuts. Roll dough into 1 inch balls, and place them 2 inches apart on an ungreased cookie sheet.
3. Bake for 12 minutes in the preheated oven. When cool, roll in remaining confectioners' sugar. I also like to roll mine in the sugar a second time.

Hillary's Chocolate No-Bake Candy Cookies



Now for a little recipe that's been in my family for generations. I've taken the liberty of renaming it in honor of Hillary because it requires no baking, and it isn't, strictly speaking, a cookie. Although I'm sure she still wouldn't approve. In my family these 'cookies' often went to church functions and although they're not fancy, were pretty popular. These are also popular after Sunday dinner when, as my own family is wont to do, the guns came out and everyone went to the quarry for a bit of target practice. Where I come from they'll pry the guns out of our dead hands, mainly because people really don't trust the government.

Hillary's Chocolate No-Bake Candy Cookies

3 cups uncooked quick oats
½ cup coconut
½ cup nuts (your choice)
½ tsp vanilla
½ cup butter
2 cups sugar
½ cocoa
½ evaporated milk (not sweetened condensed)

Before you begin lay out a sheet of wax paper on a cookie sheet. This is where you will place spoonfuls of the finished cookie mixture to cool. Mix oats, coconut and nuts in a large bowl. Combine butter sugar, cocoa and milk in a heavy bottomed saucepan and cook over medium heat stirring constantly until the mixture reaches a full boil. Boil one minute stirring continuously, then add vanilla. Pour over the cereal-nut mixture and stir together. Drop spoonfuls onto the wax paper and let cool. That's it.

Hillary's Cinnamon Swirl Target Cookies


Here's one for when you want to go shootin' out on the back 40. Or perhaps for those hectic days when you just want to unwind after surviving a sniper attack. These little target cookies are also a Southern favorite, popular at church picnics and the like. Hillary may not respect you in the morning for making them, but she'd take 'em to the pot luck on White House china.
Hillary's Cinnamon Swirl Target Cookies
Ingredients:
Dough:
1 cup unsalted butter, room temperature
½ cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
3 cups all-purpose flour, plus additional for work surface
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon ground cinnamon

Filling:
1 cup firmly packed light brown sugar
2 tablespoons ground cinnamon

Icing:
2 ½ cups confectioners (powdered) sugar
2 tablespoons unsalted butter, melted
1 teaspoon pure vanilla extract
3 to 4 tablespoons milk

Directions:
Dough:
In a large bowl, combine butter and sugar; cream together until mixture appears light and fluffy. Add eggs and vanilla; beat until thoroughly mixed. Add flour, baking powder, salt, and 1 teaspoon cinnamon; stir until mixed.

Cover dough and refrigerate at least 2 hours.

Filling:
In a small bowl, combine brown sugar and 2 tablespoons cinnamon. Set aside.

Assembly:
On a lightly floured surface, roll dough into a rectangular shape and a ¼ inch thickness. Sprinkle brown sugar cinnamon filling mixture evenly over dough and press lightly into the dough with your fingers.

Roll-up dough jelly-roll style, starting with a long side. Brush off any excess flour from the dough. Wrap in wax paper and refrigerate until well chilled, at least 4 hours or overnight.

Bake:
Preheat oven to 350 degrees F. Lightly grease baking sheets, or line baking sheets with parchment paper.

Slice dough into ¼ inch slices and place 2 inches apart on baking sheets. Return remaining dough to refrigerator until ready to use. Bake 9 minutes or until cookies are set and the edges are just barely browned. Remove from oven and let cookies cool on baking sheet one minute. Remove cookies from baking sheets and finish cooling on wire racks.

Obama White Chocolate Macadamia Coconut Cookies



A great all-American down home favorite with a Hawaiian twist. It's an improvement on a classic.

Obama White Chocolate Macadamia Coconut Cookies


2 1/4 cups all purpose flour
1 tsp baking soda
1 tsp salt
3/4 cup butter (softened)
¾ cup granulated sugar
¾ cup brown sugar
2 eggs
2 tsp vanilla
12 oz package white chocolate chips
1 cup chopped macadamia nuts
1 cup coconut

Preheat oven to 350 degrees.

Combine dry ingredients and set aside. Cream butter and sugar together. Add eggs and vanilla. Combine flour mixture and butter mixture. Add the white chocolate chips, coconut and nuts. Mix until blended.

Using a teaspoon, scoop cookie dough and form into round balls and
place them two inches apart on the baking sheet..

Bake in the 350 degree oven for 12 minutes or until the cookies are lightly
browned and set.

Hillary's Dynastic Gold-Leafed Shortbread


If you don't have a fleur de lis cookie cutter available just use your tiara shaped cookie cutter. Edible gold leaf may seem like a stretch to some, but we're dealing with Hillary and she is the heir apparent, so let her eat gold. These cookies are fit for a queen.
Hillary's Dynastic Gold-Leafed Shortbread
CHOCOLATE DIPPED SHORTBREAD COOKIES
1 1/2 c. softened butter
3/4 c. sugar
1 tsp. vanilla
3 c. flour
1 tsp. salt (1/2 if desired)
Preheat oven to 350 degrees. In large bowl combine butter, sugar, vanilla and beat until creamy. Blend in flour and salt. Roll out dough and cut into royal shapes. Bake about 10 minutes until lightly browned on edge. Remove from cookie sheet and cool completely.
DIPPING:
1 (12 oz.) bag semi sweet chocolate morsels
1 tbsp. solid shortening
1 1/2 c. finely chopped pecans or walnuts
Melt over hot (not boiling) water the chocolate morsels and shortening. Dip each cookie into chocolate. Shake off excess and while the chocolate is still soft sprinkle with gold leaf flakes or cover with sheet gold leaf. Chill in refrigerator 30 minutes on waxed paper lined cookie sheet. Yields enough for one.

Hillary's Faux Chocolate Chip Cookies



Much like Hillary herself, these cookies are not what they pretend to be. They're like a feminist who rides her husband's coat-tails to power. Or a professed crack marks-woman with no gun. Like yet another Ivy Leagued populist who pretends to relate to hoi polloi, only to collect the spoils of power. Seemingly sweet, but sugar free. And those chocolate chips? Fooled you again-- Carob! Sure, they seem like good old familiar chocolate chip cookies like mom used to bake. Then you take a bite. But you must remember, she knows what's best for us. Remember the Wellesley motto:"Non Ministrari sed Ministrare" (not to be ministered unto but to minister) and you'll realize she knows better than you do.
Hillary's Faux Chocolate Chip Cookies

INGREDIENTS:

* 1 banana, mashed
* 3/4 cup brown rice syrup
* 1/4 cup soy milk
* 1/4 cup vegetable oil
* 3 cups flour
* 1/4 tsp salt
* 1 tsp baking powder
* 1 tsp baking soda
* 2 cups carob chips

PREPARATION:
Pre-heat oven to 325 degrees.

Combine the banana, brown rice syrup, soy milk and vegetable oil and whisk until well combined.

In a separate bowl, combine the flour, salt, baking powder and baking soda.

Add to banana mixture, stirring well to combine.

Fold in carob chips.
Bake 10-12 minutes or until golden.
You WILL enjoy these.

Barack Marbled Brownies


It's time for a change up from plain old, business as usual brownies. If we can't vote for change, as Hillary would have us believe, maybe we can bake it. Without instant access to power via a politically powerful husband, baking may be the best some of us can do. Try these black and white and good-all-over Barack Marbled Brownies.
Barack Marbled Brownies
1 c. butter
4 oz. unsweetened chocolate
2 c. sugar
2 tsp. vanilla
4 eggs
1 1/2 c. flour
1/2 tsp. salt
1 c. coarsely chopped nuts
CREAM CHEESE FILLING:
1 (8 oz.) pkg. cream cheese, softened
1 egg
1/4 c. sugar
1 tsp. ground cinnamon
1 1/2 tsp. vanilla
FILLING: Beat all ingredients in medium bowl on low speed 2 minutes, scraping bowl occasionally.
Heat oven to 350 degrees. Grease square 9x9x2 inch pan. Prepare Cream Cheese Filling. Heat butter and chocolate over low heat, stirring occasionally until melted; cool. Beat chocolate mixture, sugar, vanilla and eggs in large bowl on medium speed 1 minute, scraping bowl occasionally. Beat in flour and salt on low speed 30 seconds, scraping bowl occasionally. Beat on medium speed 1 minute. Stir in nuts.

Spread half of the batter in pan. Spread with Cream Cheese Filling. Gently spread remaining batter over filling. Gently swirl through batter with spoon for marbled effect. Bake 55 to 65 minutes or until wooden pick inserted in center comes out clean; cool. Cut into 1 1/2 x 1 inch bars. Yields: 48 brownies.
